Final Roast Rooster

Substances:

  • 1 rooster, 3to Four half of lbs., lumps of fats and tail eliminated, rinsed and patted very dry
  • High-quality sea salt (1 half of tsp. for a 3- to three 3/4-lb. rooster or 2 tsp. for a 4- to Four 1/2-lb. rooster)
  • Pepper (3/Four tsp. for a smaller rooster or 1 tsp. for a bigger one)
  • French Herb Seasoning Rub or
  • Mediterranean Coriander Seasoning Rub (non-compulsory)
  • About 1 tbsp. olive oil (for plain or French Herb rooster)
