Rooster Pie


  • 6 tablespoons salted butter, plus extra for buttering the dish
  • 3/four cup finely diced onion
  • 3/four cup finely diced carrot
  • 3/four cup finely diced celery
  • 3/four cup finely diced parsnips
  • Kosher salt and freshly floor black pepper
  • 1/2 cup white wine
  • 1/Three cup all-purpose flour
  • four 1/2 cups low-sodium rooster broth, plus extra if wanted
  • 3/four cup frozen inexperienced beans
  • 1 1/2 tablespoons chopped recent thyme
  • 1/2 teaspoon floor turmeric
  • 1 recipe Shredded Boiled Rooster (6 cups), recipe follows
  • 1/Three cup half-and-half or heavy cream
  • 1 egg blended with 1 teaspoon water, for the egg wash
  • 1 sheet thawed frozen puff pasty
  • Two 1-quart cartons rooster broth
  • Three rooster breasts
  • Three rooster thighs
