Attempt a rooster casserole with a distinction and whip up this model with mushrooms, olives, tomato and parsley
- 1 tbsp olive oil
- 300g pack cup mushroom, halved
- four rooster leg, pores and skin eliminated
- 500g jar garlic & herb passata
- 1 rooster inventory dice
- 100g pitted black kalamata olive
- chopped parsley, to serve (non-obligatory)
- pasta and a salad, or mash and inexperienced veg, to serve (non-obligatory)
- Warmth the oil in a big flameproof casserole dish and stir-fry the mushrooms till they begin to soften. Add the rooster legs and cook dinner briefly on all sides to color them a little bit.
- Pour within the passata, crumble within the inventory dice and stir within the olives. Season with black pepper – you shouldn’t want salt. Cowl and simmer for 40 minutes till the rooster is tender. Sprinkle with parsley and serve with pasta and a salad, or mash and inexperienced veg, in the event you like.
